El SENASAG visita la planta procesadora de carne de paiche y lagarto en Bella Vista y los resultados son positivos

Bella Vista, julio, 2022.- El pasado lunes 18 y martes 19 de julio, autoridades a nivel nacional y departamental del área de Inocuidad Alimentaria del Servicio Nacional de Sanidad Agropecuaria e Inocuidad Alimentaria “SENASAG” estuvieron presentes en la comunidad Bella Vista del Parque Departamental ANMI Iténez realizando la inspección y toma de muestras en la planta procesadora de carne de paiche y lagarto, con el objetivo de iniciar el proceso para la obtención del registro sanitario.
Los aspectos para evaluar fueron: infraestructura, materias primas e insumos, proceso, maquinaria, equipo y utensilios, personal, producto terminado, servicios, manejo de desechos, control de plagas, transporte, como también, limpieza y desinfección.
El SENASAG sacó muestras de agua y de pescado, las mismas fueron remitidas a 2 laboratorios en Cochabamba y La Paz, para poder determinar si el agua está libre de microorganismos, y si el pescado no presenta arsénico, cadmio, plomo o mercurio.
Después de muchas horas de inspección y reunión con los pescadores, se procedió a la evaluación, donde se obtuvo una calificación de 89,8 puntos sobre 100. Esta calificación, habilita a la Asociación de Pescadores del Iténez para que puedan comercializar el producto a nivel nacional.
Anahí Llanque, oficial técnico de proyectos de WWF-Bolivia, expresó “lo que buscamos como WWF-Bolivia, en el marco de proyecto 'Consolidar la gestión sostenible de los recursos naturales como una estrategia para la conservación de la biodiversidad y para mejorar los medios de vida de las comunidades indígenas y campesinas del PD ANMI Iténez' es que la Asociación consolide la cadena productiva, donde uno de los eslabones más fuertes es la transformación y comercialización del producto. Esto al mismo tiempo, fue una motivación para que dobleguemos esfuerzos para obtener un producto de calidad y así conseguir el registro sanitario del SENASAG, para que puedan comercializar el producto no solo a nivel local, sino nacional, lo que significa que los habitantes del PD ANMI ITENEZ mejorarán su calidad de vida incrementando sus recursos económicos.”
La Asociación de Pescadores recibió el resultado con mucha alegría puesto que cumplen con las condiciones para tener un alimento con todas las normas de inocuidad e incluso fueron felicitados por el SENASAG.
El Dr. Diego Cortez, Profesional de Habilitación y Autorización del Área de Inspección y Control del SENASAG, indicó que, este sería el primer registro sanitario en actividad pesquera solicitado por el sector campesino y está muy contento en apoyar al desarrollo económico del Área Protegida.
WWF-Bolivia apoya con la infraestructura productiva y con la capacitación de los pescadores en buenas prácticas de pesca, manipulación y manufactura. El siguiente paso es apoyar a la Asociación de Pescadores con la realización de un sondeo de mercados para posicionar su producto con marca “PD ANMI Iténez” en mercados nacionales.
“Nosotros como técnicos sentimos que hemos realizado un importante trabajo, ya que ser la herramienta para que los habitantes del Iténez tengan mejores condiciones de vida, es un honor” finalizó Anahí.
